This oil is derived from hand picked Coratina olives that are harvested whole and fresh at the time of maturation. The olives are immediately transferred to the mill-stone where they are ground and slowly cold pressed. It then matures underground resulting in the extra virgin olive oil Mosto, from the first raw press.

It is high in antioxidants and boasts a low percentage oleic acid. The intense amber green color and herbaceous taste will give a finishing touch to seasonal cuisine. This unfiltered oil is best appreciated uncooked.

As the fermentation and ripening of Mosto, from Coratina olives, takes place in underground rock cisterns, the oil is refined through a gentle filtration system. The result is a naturally filtered green colored oil called Vivace. It has a strong fruity scent, recommended to be served as a finishing accent or in light sauté cooking.

In a similar development process of Vivace, Amabile (derived from Coratina olives) is allowed to gently mature in underground rock for a period of 2 – 3 years. The final mature oil offers a unique sweet almond flavor. It is appropriate for cooking and side dishes, especially with fish.

Florido oil has the characteristics of medium fruitiness, low acidity and a color of straw green. Ideal for all cooking uses.

This extra virgin olive oil is from the first press of the harvest- the "new" olive oil of the season. Made from Coratina olives, it is unfiltered, earthy and high in antioxidants.
